Not a recipe. A repeatable process. Two eggs, brown bread, ghee, and a strict assembly order that hasn't changed in years.

  • ½ Ghee
  • ½ Tandoori mayo
  • Amul cheese slice
  • Jalapenos slice
  • Mixed herbs

The Bind

Step 01

Heat a light layer of ghee. Crack two eggs side-by-side directly into the pan. Immediately place one slice of brown bread on top of each cooking egg so the whites bond to the bread.

Step 02

The Inversion

Once the lower half of the eggs are set, execute a seamless flip. The brown bread now faces the heat to achieve maximum crispness in the ghee, while the cooked eggs face upward, serving as a hot canvas.

Step 03

Asymmetrical Flavoring

Focus all toppings on ONE side only. Apply Tandoori mayo and center the Amul cheese slice. Place exactly 3 jalapeno slices on three corners. Deliberately leave the fourth corner empty to create a varied flavor profile per bite.

The Dusting

Dust the topped side with mixed herbs, chilli flakes, and Jamaican spice. The order builds a complex, smoky heat.

Step 05

The Fold

Check the bottom bread for a deep golden crisp. Fold the empty half over onto the topped half to seal the sandwich and melt the cheese. Cut diagonal.

The Fuel
